Pineapple Bliss

Memorial Day weekend is quickly approaching, which means the start of cook-out season.  I have a few parties to attend in the next couple weeks and came across a light, yummy and low-fat dessert to contribute to the goods. It's a cinch to make and would look adorable with a slice of citrus gummy candy or brightly colored sprinkles on top, and cute, summery liners.

Pineapple Bliss Cupcakes
{Recipe by}

1 box yellow cake mix
20 oz. can crushed pineapple in juice (don't drain)

Directions: Combine both ingredients in a large bowl and mix well. Pour into lined cupcake tins and bake according to directions on cake mix box. Set aside to cool.

Pineapple Fluff Cream Cheese Frosting  
{Recipe by}

8 oz. Philadelphia 1/3 less fat cream cheese
20 oz. can crushed pineapple in juice (drain well and squeeze)
3/4 cup marshmallow fluff

Directions: Combine cream cheese, marshmallow fluff and pineapple in a bowl and mix until combined well. Spread on cooled cupcakes and refrigerate until ready to eat.
