Berry good

Although it is still quite hot here in Florida, I felt like doing a little baking to welcome September and, hopefully, cooler weather. Berries are still in abundance so I made a blueberry pie. Warm out of the oven and topped with vanilla frozen yogurt, it was delicious and hit the spot. It was also very simple to make. I used a Pillsbury pie crust since I was short on time, but feel free to make your own.

(Cooking Light recipe)
For the filling:
3/4 cup sugar
3 1/2 tbsp cornstarch
1/8 tsp salt
6 cups blueberries
1 1/2 tbsp butter, melted
3/4 tsp vanilla extract

Directions:
Combine 3/4 cup sugar with 3 1/2 tbsp cornstarch and 1/8 tsp salt. Sprinkle over blueberries and toss gently. Stir in melted butter and vanilla. Spoon mixture over pie crust (already in a pie plate) and top with the remaining crust in strips for a lattice design. Sprinkle lattice with one tbsp sugar. Bake at 375 degrees for one hour and 15 minutes until crust is browned and filling is bubbly.
