Busy as a bee

Hi everyone! I hope you all had a great weekend. Life has gotten so busy lately. I filled out an application for a new apartment I'm moving into with a new roommate. It was a long search for a place and a rather frustrating process, but I think the new place will be great and a lot of fun. It is in a charming little town, not far from where I live now. I'm looking forward to moving at the end of the month.

I had a dance performance this weekend also, which was very fun. My group was asked to perform at a Broadway Night and we did jazz to "All that Jazz" and I choreographed a tap dance to "42nd Street". We had some fun costumes complete with sparkly gold top hats and sequined feather headbands (think flapper style). All went well!

I also got to see the space shuttle launch. It was amazing! The bf and I drove to Port Canaveral for the midnight launch and the sides of the road were just packed with people. I am really glad we saw it. It was worth the drive and staying up late.

Today's mission is to figure out what to bring to my work potluck on Wednesday. We have potlucks every few months and I'm running out of my signature items to bring. I've brought everything from spinach dip to pasta salads.

Regarding potluck, you could try repeating a dish that was popular? I am totally one who repeats things when I need to bring food (partly because I have a limited cooking repertoire!).

What a neat thing to witness! I always do the easy thing and sign up for dessert. It is much simpler than worrying about keeping the dish hot/cold.

I bring a Strawberry Salad.

For the actual salad, it's just a Spring Mix, sliced Strawberries, almonds (or sugared pecans), and Monterey Jack cheese.

The dressing is homemade....

1 C Vegetable Oil
3/4 C Sugar
1/2 C Red Wine Vinegar
2 Cloves Garlic Minced
1/2 t Salt
1/2 t Paprika
1/4 t white pepper

You mix well and cover tightly, refrigerated.

When ready to serve, shake the dressing really, really well before pouring over the salad.

OMG! You have been so busy! No wonder you are tuckered out! Finding an apartment is such a big deal - congrats! As for the office party dish, I usually make a homemade southwest salsa and bring some chips. Another idea is to bring cheese and crackers - just easy finger foods that are not-too-difficult to make up!

A new apartment - fun! Also, how cool that you got to see the space shuttle launch (I watched it on tv)!

I almost always bring desserts to work functions, that way in case I run out of time to make something, I can buy something delicious at the bakery (if I have to).

I am the worst when it comes to potlucks at work...I usually pick some dessert up at the market and call it a day! :)

You have been a busy girl!!! I always make an Onion Dip. Hopsy put the same recipe on her blog for Waspy Wednesday b/c obviously, it's a very popular dish and easy to make. And, it's always eaten in no time!

I haven't participated in a potluck since I was a teacher, but I always made a delicious batch of soup in a crock pot!
