Craving Citrus

Happy Monday to all! I hope everyone had a fabulous weekend. I went to the beach on Saturday, so it was fabulous to sit and watch the waves, look for shells, play on the beach and have an ice cream cone. Sunday was spent at church and then working on getting organized. I am redoing my bedroom at the moment, and will be sure to post about some fun projects later on.
Lately, I have really been craving citrus things.  T's family has an orange tree in their backyard, and the fruit is delicious! How fun is it to pick your own fruit off the tree? Citrus fruits are in season and yummy during the winter. In honor of this I am posting some treats. One of my favorites is lemon squares, so here are some other variations of this dessert.


Lemon-Orange Bars (www.rachaelraymag.com)
2 sticks butter, softened
2 cups plus 2 Tbsp flour
1/2 cup confectioners sugar
1 1/2 tsp grated lemon peel
1/2 tsp grated orange peel
2 cups sugar
4 eggs
1/2 cup lemon juice
1/4 cup orange juice
1 tsp baking powder

** Preheat the oven to 350. Using the electric mixer, combine the butter, 2 cups flour, and confectioners sugar. Stir in 1/2 tsp of the lemon and orange peel. Press the mixture into the bottom of a 9 x 13 baking pan. Bake 25 mins.
** Meanwhile, using an electric mixture combine the sugar, eggs, lemon juice, orange juice, remaining tsp of lemon peel, 2 Tbsp flour and the baking powder. Pour the filling into the crust and bake until the top is golden, about 40 mins. Let it cool, then cut into bars and dust with confectioners sugar.

Refrigerated cookie dough
Lemon
Raspberry preserves

** Mix grated lemon peel and lemon juice into the dough. Press into an 8 inch square pan and bake at 350, about 15 mins. When cool, spread with a thin layer of raspberry preserves.


Lemon Coconut Squares (www.kraftfoods.com)
35 Nilla Wafers, finely crushed
1 cup sugar, divided
1/4 cup butter, melted
1 tsp grated lemon peel
2 eggs
1/4 cup lemon juice
2 Tbsp flour
1/2 tsp baking powder
1/4 tsp salt
1/3 cup coconut

** Preheat oven to 350. Mix wafer crumbs, 1/4 cup sugar, butter and lemon peel until well blended. Press into an 8-inch square baking pan. Bake for 8 mins.
** Beat eggs and 3/4 cup sugar with a wire whisk until thickened and well blended. Add lemon juice, flour, baking powder and salt. Mix well. Pour over crust and top with coconut. Bake 30 mins. until center is set and top is lightly browned. 

Lemon Chess Gooey Butter Cake (not pictured, www.foodnetwork.com, Paula Deen)
Crust:
1 package yellow cake mix
8 Tbsp butter, melted
1 egg
Filling:
2 lemons
1 package cream cheese
2 eggs
8 Tbsp butter, melted
2 Tbsp white or yellow cornmeal
3 and 3/4 cups confectioners sugar

** Preheat the oven to 350. For the crust, place the cake mix, melted butter and egg into a mixing bowl. Blend for two minutes, the batter should come together in a ball. Pat the batter over the bottom of a 9 x 13 pan and smooth it down. 
** For the filling, grate 2 tsp of lemon rind. Cut the lemons in half and squeeze into a bowl, should be about 6 Tbsp Set the juice aside. Place the cream cheese into the same mixing bowl that was used for the crust and with the same beaters blend until fluffy, about 30 seconds. Stop the machine and add lemon juice, lemon zest, eggs, melted butter and cornmeal and beat for one minute. Then add the confectioners sugar. Beat until the sugar is incorporated. Spread onto the crust mix and cover the entire surface. Place pan in the oven. Bake the cake until it is browned, but the center still jiggles when you shake the pan, about 45 mins. total.
